Troy Brown is the former Executive Chef at The Lucia Lodge in Big Sur, California. Troy was dining with his wife and friends a couple of years ago, enjoying their Portabella Mushroom appetizer. Troy thought the appetizer was OK, but his first thought was, "This could be better prepared". This Began much experimentation, preparation and enthusiastic conversation with a variety of people over time. Troy's message was the same... Over time Troy's recipes tasted even more exquisite than even imaginable. The taste buds of his friends began to expand to include the Magic of Portabellas. As time passed one thing was revealed to him over and over... People liked the way he cooked Portabellas and they couldn't believe it was a Mushroom.
