Troy Brown is the former Executive Chef at The Lucia Lodge in Big Sur, California.

Troy was dining with his wife and friends a couple of years ago, enjoying their Portabella Mushroom appetizer. Troy thought the appetizer was OK, but his first thought was, "This could be better prepared".

This Began much experimentation, preparation and enthusiastic conversation with a variety of people over time. Troy's message was the same...

Over time Troy's recipes tasted even more exquisite than even imaginable. The taste buds of his friends began to expand to include the Magic of Portabellas. As time passed one thing was revealed to him over and over... People liked the way he cooked Portabellas and they couldn't believe it was a Mushroom. The expressions on their faces when they would taste his creations said it all AMAZEMENT!

Thats when he decided to create a cook book so others could experience the joy and accomplishment of cooking something new. Without much difficulty.
